Nounou's bouillabaisse is the real mediterranean tradition.

This dish draws its origin from ancient Greece. At the time of the foundation of Marseille in seventh century, the population ate a simple "ragout" of a fish named "Kakavia" in Greek.

This dish is for the poor that fishermen of the Creeks with unsold goods of fishing formerly made, it became the Bouillabaisse of the Provence that we know: "Bouï-abaisso" of the Provincial Occitan "Bolh abaissa  is "bout" and abaissa "abaisse" while speaking about fire.

This dish is composed of a fish soup accompanied with white fish and rockfish, served whole which we eat garlic-flavoured croutons and "rouille" (a type of orange spicy sauce).

Nounou perpetuates this tradition from the real Bouillabaisse, prepared with the fresh fish caught by fishermen.
